scope of pièces montées[edit]

i believe that although the article refers to possible present categorizations of these structures, their history (of the term itself and of these objects) goes back well before the great French chefs like Carême, probably to the Romans. I believe as well that they were not always made of edible materials but were sometimes actual constructions incorporating wood. That would mean that the dessert category is only partially the way to frame this discussion; though confectionery is more broadly applicable, it may also not suffice.
