One Dad, Two Dads, Brown Dad, Blue Dads is a stub. More pastiche than parody.
Two Moms, the Zark and Me, sequel to the above.
"A Scause for Applause" contained a Dr. Seuss parody as a segment.
The Kid in the Crib was reviewed in Library Journal.
The Cat and the Mitt is a Dr. Seuss parody. Several newspapers that have mentioned it, some with a brief summary, as part of their RNC reporting.
The Cat NOT in the Hat, by "Dr. Juice", is a suppressed book, the OJ trial told in Dr. Seuss fashion, the subject of a perhaps notable lawsuit.
"The OJ Trial As Told By Dr. Seuss" was a viral e-mail/USENET posting back in the day. It is mentioned, and the first four lines are quoted, in Nel.
"The Binch That Stole Airplanes" is a Dr Seuss parody about 9/11, available on Snopes, who explains it was discussed in several newspapers. It is mentioned in Nel.
Moxy Früvous has a version of Green Eggs and Ham.
Bulworth: the raps are described by Nel as in the style of Dr. Seuss.
Truax is a pro-logging rebuttal discussed in The Lorax, mentioned in Nel. It is definitely a parody, but note that this entry is a subpage of The Lorax, which obviously should not be in the parody category.
"How the Grinch Stole the Election" by Bill Maher, mentioned in Nel.
"How the Grinch Stole America" by Salman Rushdie, collected in his Step Across This Line, mentioned in Nel. Pretty much all reviews of the latter mention the parody.
"Oh, The People Who Hate You!" by Jon Stewart, received some newspaper coverage.
"Scooping the Loop Snooper", a Dr. Seuss style proof of the unsolvability of the halting problem, [1], linked-to in the Geoffrey K. Pullum and Halting problem articles.
No Jumping on the Bed! article says it is written in a Dr. Seuss style. I don't see it.
The Story of Flibber-o-loo article says the author wrote it "as if he were Dr. Seuss". Unsourced.

Seeing this category get CfD'd twice invoking WP:SMALLCAT, I'm keeping here a list of possible entries. I personally have little interest in doing the necessary work to track down the blue-linked items above and decide whether they really are Dr. Seuss parodies, and I have little interest in creating a bunch of stubs in place of some of the red-linked items above, just to populate this category. I have simply rescued the list from the CfD discussions and put it here for the record: This is not a small category with no potential for growth!
